Water vapor in the atmosphere attaches to a floating particle of pollen or dust and acts as a nucleus. This means that it can start to add (ie nucleate) more water molecules and grow in size. When it happens at cold temperatures, the water also freezes and crystallizes.
Despite the many unique styles of snowflakes, they all crystallize in exactly the same shape – a hexagon. The reason for this is related to the way water behaves on a chemical level. At room temperature, water molecules flow randomly around each other, endlessly forming and breaking bonds.
However, when temperatures cool, they lose kinetic energy and form more stable bonds. At 0°C, they rearrange themselves in an energy-efficient position, which happens to be a rigid, hexagonal configuration. This is frozen water or ice.
