For us here at Red Mill, that means building a gingerbread house. And not just any gingerbread house – it was a talented team of Head of Food Innovation Sarah House, Director of Consumer Marketing Lindsay Duncan, Marketing Project Coordinator Amber Olson, Graphic Designer Nell, Photographer Julie Garner and Marketing Content Specialist Elizabeth Alley (that’s me!) built. They grew in popularity and of course these days you can find simple kits in any grocery store. But after a three-day cooking odyssey, we’ve got some tips for you, whether you’re cooking yourself or decorating a prefab. We also have a simple gingerbread house design that you can download and use with the recipe below!

Rome wasn’t built in a day, and your gingerbread house probably shouldn’t be. Sarah House, who baked the gingerbread for our project, allowed the finished pieces to dry and harden for five days before starting to build! Although five days is not absolutely necessary, if you have the time, leaving the gingerbread out overnight can make your house more stable.

The same goes for the construction process: for best results, stick the walls together with hard ice and let it set overnight before gluing the roof and other parts. Let the cakes and frosting details dry before adding finishing materials like frosting so you don’t accidentally spread or smudge your work!

Before you start building your gingerbread house, look for inspiration online or make a plan to determine what you want to do. It’s not just for aesthetics: you may find it makes sense to raise/decorate the vertical parts of the gingerbread house.

You put it together For example, Amber traced and then piped the red stripes on the walls of our whole grain store before we put the walls together. Not only was it easier to make even lines this way, but it saved his wrist a lot of pain!

There’s nothing worse than wasting 20 minutes in the middle of a project looking for a piping tip. Trust me, I’ve been there. As part of your plan above, get all the tips, knives and cutting tools, spatulas, food coloring and rulers you need. You’ll thank me later! #ProTip from Sarah: Do you have different colors of cream that require the same tip? If you don’t have a jointer, do the two-bag trick: put your icing in separate plastic piping bags and cut off the top. When you’re ready to use a color, take an extra plastic piping bag, flip it over, and place the piping bag inside. Replace (and erase the tip) if necessary!

Once your gingerbread house is well built, it’s time to decorate! We used all kinds of candy for ourselves: candy, gum, jelly beans, etc. Hit the candy aisle or bulk lot and let your imagination run wild! For example, we found pieces of cookies covered in white chocolate sprinkles, which we cut in half and use as the stone “base” for our grinder. Nuts, licorice, coconut flakes, and cookies are also great to use: the crackers in our house are cut-up wafer cookies!

Seriously. If you’re craving gingerbread, make some leftover gingerbread women! You don’t want to chew week-old gingerbread, especially if you used raw egg whites in the frosting. Just say no!

This easy gingerbread recipe is sturdy enough to build a house and delicious enough to enjoy as a cookie: Make gingerbread cookies out of those scraps!

Thick Gingerbread (for the walls) Combine the flour, spices, baking powder, baking soda and salt. In a bowl, beat the cream and brown sugar until well blended. Add the egg and molasses and mix well, then add the dry ingredients and mix until you have a soft dough. Remove from bowl, wrap in plastic and refrigerate overnight.

To bake, preheat oven to 350°F. Roll out the dough between two pieces of parchment paper, about ¼ inch thick, the size of a baking sheet. Bake until tender, about 25 minutes. Using a gingerbread tin and a sharp knife or pizza cutter, let cool and then cut shapes to size. Let it sit uncovered at room temperature for about 5 days to dry completely.

Thin Gingerbread (for roof and decoration) Combine flour, sugar, spices, baking soda and salt. Place in a food processor a few times to combine. Add the shortening and mix until the mixture becomes as thick as sand. Add the molasses and adjust with water until a smooth paste is obtained. Remove from the food processor and divide the dough in half. Roll dough between ⅛-inch-thick pieces of parchment paper, then chill overnight.

To bake, preheat oven to 325°F. Cut shapes from the chilled dough to size and carefully transfer to lined baking sheets. Bake for 15 to 20 minutes. While the molds are still very hot, trim the edges if necessary. Let it sit uncovered at room temperature for about 5 days to dry completely.

For the cream, mix the egg whites and 4 cups of powdered sugar. Stir until well combined. Divide into separate containers and add food coloring as desired.

To make a thicker frosting, add additional powdered sugar until the frosting holds its shape, is stiff but still soft enough to slide easily through the tip of the blender.
