For years, these fennel-flavored cookies were available around Christmas. They are no longer available in our area and so I ordered them from this site. The smell isn’t as strong as I thought it would be. There is a “hint” of fennel flavor and that’s about it. The cookies arrived quickly and were very fresh, but the taste was not up to par. Jingles are shortbread cookies flavored with pure fennel extract and a touch of nutmeg. They appear in stores around November, sprinkled with red and green depending on the season!

You can imagine how disappointed I was when this year’s jingle package wasn’t as tasty as I remembered. I can’t put my finger on it, but they don’t have that “zip” that makes them special anymore.

I was looking for a recipe to make homemade jingle cookies and came up empty handed. So I did what any food blogger would do: I tried to make my own!

The taste is exactly as remembered! You’ll love these as an alternative to the classic Kibbler or as a way to mix up your Christmas cookies!

Start by beating the powdered sugar and butter, then mix the rest of the ingredients (except the sprinkles) into a crumbly dough.

Press dough into a ball by hand, wrap in plastic wrap and shape into a log. Chill the dough while preheating the oven.

After 30 minutes, open the dough rack and cut the cookies into 1/4 inch thick slices. Sprinkle baked cookies with sugar crystals and bake for 13-15 minutes.

There is no jingle without anise! However, if you prefer, you can make it as a simple shortbread cookie by replacing the fennel with vanilla. Just don’t tell them the jingle!

You can freeze shortbread cookies, but the sugar crystals will color the cookies as they melt. The cookies still taste good, but they don’t look quite cool!
